Scaling recipes is essential because recipe amounts are written for a specific number of people or servings. A recipe that makes 12 cookies isn't helpful if you only need 6 cookies, or if you're baking for a party of 50 people. By understanding how to scale recipes proportionally, students learn that ratios stay the same even when quantities change—a critical foundation for understanding rates, unit pricing, and real-world problem-solving. This also teaches that the relationship between ingredients matters more than the absolute amounts.
While they look similar, they represent different things. A ratio 2:3 compares two separate quantities (e.g., 2 cups flour to 3 cups sugar—two different ingredients). A fraction 2/3 represents a part of a whole (e.g., 2 cups out of 3 cups total). In recipes, if you have 2 cups flour and 3 cups sugar, the ratio is 2:3, but the fraction of the recipe that is flour is 2/5 (since 2+3=5 total cups). It's important to know which question is being asked: are we comparing two ingredients (ratio), or finding what portion one ingredient is of the whole recipe (fraction)?
The best way to verify is to check that the ratio between ingredients stays the same. Divide each new ingredient amount by the original ingredient amount—you should get the same scale factor for every ingredient. For example, if you scale a recipe by multiplying by 2, then 2 cups flour should become 4 cups (2×2), 1 cup sugar should become 2 cups (1×2), etc. You can also reduce your new ratio to see if it simplifies back to the original ratio. If original was 2:3 and new is 6:9, dividing both by 3 gives you 2:3, confirming it's correct.

A scale factor is the number you multiply by to get from one version of a ratio to another. It's the multiplier that connects an original ratio to a scaled ratio. For example, if a recipe calls for 2 cups of flour and you need to triple it, the scale factor is 3 (because 3×2=6 cups). Scale factors work the same way whether you're scaling up (using a factor greater than 1) or scaling down (using a fraction like 1/2). Understanding scale factors helps you quickly scale any recipe without having to set up a full proportion—you just multiply each ingredient by the same scale factor.
